Menu Planning - Snowed In Style (2/8)

I am so thankful I shopped for this week last Thursday. The stores may have been crazy but I have only left the house once since the snow started on Friday and that was to take my son to a doctor's appt. today. Wow! The roads are a MESS. I had hoped to take a quick trip to the store for a few of the sale items I missed but NO I couldn't go. Way too much effort to drive on slush.

Fortunately I also menu-planned for this week on Thursday. I didn't feel like dealing with it that far in advance but now I'm glad I went ahead and did it rather than running to the store for milk and bread and having to go back today :)

Here's what I picked for this week:

3 Recipes are from a Pampered Chef Cookbook: Main Dishes (PC) - seems that it is now out-of-print but it is one of my favorite PC cookbooks. Other recipes are from my new Taste of Home Cookbook (TOH).

Monday: Mac and Cheese Soup (PC)

Tuesday: Roast Chicken, Mashed Potatoes, Broccoli and Biscuits

Wednesday: Creamed Turkey (using Chicken) on Mashed Potatoes (TOH)

Thursday: Chicken Shepherd's Pie (TOH)

Friday: Taco Ring (PC)

Saturday: Cheesey Chili Casserole (PC)

One of the easiest ways to plan meals is to make something once and then use it multiple times during the week. Tomorrow I will have chicken and mashed potatoes and then I will use both items for the next two meals. Makes for great meals and only 1 day of actual work :)

Anything that can be done in advance is extremely helpful so if you haven't tried meal planning I highly encourage you to try especially in the winter months. After all, you never know when you could be stuck in your house for a whole week!
