Tonight I made a quick and cheap meal for the family. We had a meeting to go to and since we have decided against fast food (like we would usually do) and just ate out last week we were committed to staying in tonight. Enter the easiest meal ever! Okay, besides spaghetti but close :)
Chicken 'N Peppers Pasta Skillet from Kraft Halloween Cookbook
Prep time: 10 minutes
Cooking time: 10 minutes plus standing
1 pound boneless skinless chicken breasts, chopped ($2.34)
1 green pepper, cut into thin strips (or chopped) ($1.49)
1 jar (14 ou) spaghetti sauce ($1.01)
2 cups (4 ou) rotini pasta cooked, drained ($1.00)
2 cup Kraft Italian Cheese, divided ($2.37)
Total: $8.21
Spray large skillet with no stick cooking spray. Add chicken; cook and stir 5 minutes. Add green pepper; cook and stir until chicken is cooked through and green pepper is tender.
Stir in suace, rotini and 1 cup of the cheese. Sprinkle with remaining 1 cup cheese; cover. Let stand 1 to 2 minutes or until cheese is melted.
Tip: To minimize last-minute prep work cook the pasta ahead, rinse it in cold water and refrigerate it until ready to prepare.
